Crockpot Granola (recipe from my bff Kelly:)

5 cups oats
1/2 cup oil
1/2 cup honey OR 1/2 cup brown sugar (or to taste)
tsp cinnamon (or other spice if you like)

Mix well and cook on low in a crockpot for 5 hours with the lid cracked (I leave my wooden spoon in mine), stirring occasionally. Stirring is important, it will burn if you don't. You can also bake at 375 for 10 minutes, or until brown. Cool. After cooking and cooling add any of the following: coconut or other nuts, sunflower seeds, raisins or other dried fruit, chocolate or carob chips, or use your imagination. Store in airtight container.

You can make bars by mixing 2 cups of granola with 2 eggs and baking in a lightly greased 8X8 pan.

I double this for my big crockpot.

Turkey Carcass Soup

1 turkey carcass (or 2 chicken carcasses, the rotisserie chicken are very good)
4 chicken bouillon cubes
2 ribs celery, chopped
3 carrots, sliced
1 medium chopped onion
2 peeled and chopped potatoes
1 tsp parsley flakes
1 tsp black pepper
1 can peas
1 cup uncooked noodles

Bring carcass to a boil in a pot big enough to cover carcass with water. Reduce to simmer and cook 45 minutes. Strain broth and pick meat from bones.  Return meat to broth and add all ingredients except peas and noodles. Cook until tender. Add peas and noodles and simmer until tender.

Soup is such a forgiving meal...don't like peas? Add green beans or corn. Don't have potatoes? Just add the noodles. Experiment with different spices. Possiblities? Endless!

Baby Wipes (disclaimer: don't eat these!)

1 roll strong paper towels (I like Viva), cut in half and remove cardboard center
2 1/4 cup water
2 tsp baby shampoo or baby bath
1 tsp baby oil

Mix the last 3 ingredients in an old baby wipes tub. Place the paper towels in the tub and secure lid tightly. Tip upside down to saturate towels. Voila!


Instant Cappuccino Recipe

1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 cup sugar
3/4 cup instant coffee (granules)
1 cup instant hot chocolate (powder)
1 cup non-dairy creamer (powder)

Directions: Mix all ingredients well. Store in an airtight container. Use 2 to 3 TBS per mug of boiling hot water, stir to dissolve. This recipe works nicely for gifts in a jar.

White Chicken Chili

1/4 cup butter
1 small chopped onion
1/4 cup flour
2 cans chicken broth (or 30 oz. water and 2 or 3 boullion cubes)
3/4 cup salsa
2 cans Great Northern or navy beans (or approx. 3 cups prepared from dry)
1 Tbsp. cumin
1 tsp salt
3 cups diced, cooked chicken

Saute onions in butter until clear. Add flour. Pour in broth all at once. Whisk together well. Stir in remaining ingredients. Add fresh or dried cilantro if desired. Top with totilla chips, grated cheddar and/or sour crean.
